The fruit gets 30 days of skin contact, ferments wild, and ages a month in amphora before bottling with minimal sulfur. The result is a deeply textured, copper hued white with dried citrus peel, tea leaf, and stone fruit pit, framed by gentle tannic grip. Kontozisis has been
